Ingredients
  

  • 1 Cup sabudana (tapioca pearls) Soaked for 4-5hr
  • 1/2 Cup peanuts
  • 2 tbsp ghee (clarified butter)
  • 1 tsp cumin seeds
  • 1-2 pieces green chilies finely chopped (adjust according to your spice preference)
  • 1 Medium Sized Potato peeled and diced
  • As per Taste salt
  • 1/2 Juice of half Lemon
  • 2-3 tbsp Fresh coriander leaves For Garnishing

Instructions
 

  • Rinse the sabudana under running water until the water runs clear. Soak the sabudana in enough water to cover them completely for 4-5 hours or overnight. Drain any excess water.
  • Dry roast the peanuts in a pan until they turn golden brown. Remove from heat, let them cool, and then coarsely crush them.
  • Heat ghee in a pan or kadhai (wok) over medium heat. Add cumin seeds and let them splutter.
  • Add chopped green chilies and sauté for a minute.
  • Add diced potatoes and cook until they turn golden brown and are cooked through.
  • Add turmeric powder and salt. Mix well.
  • Add the soaked and drained sabudana to the pan. Mix gently to combine with the other ingredients.
  • Cook the sabudana mixture on low heat, stirring occasionally, until the sabudana pearls become translucent and soft. This should take around 5-7 minutes.
  • Add the coarsely crushed peanuts and mix well.
  • Turn off the heat and squeeze the lemon juice over the khichdi. Mix gently.
  • Garnish with chopped coriander leaves.
