Ingredients:

  • 1 cup foxtail millet
  • 1 small onion, finely chopped
  • 1 small carrot, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped (adjust according to your spice preference)
  • A few curry leaves
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon urad dal (split black gram dal)
  • 1/2 teaspoon chana dal (split Bengal gram dal)
  • 1 tablespoon oil or ghee (clarified butter)
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnishing
  • Lemon wedges, for serving (optional)

Instructions:

  1. Wash the foxtail millet thoroughly and soak it in water for about 30 minutes. Drain and set aside.
  2. Heat oil or ghee in a pan or kadhai (wok) over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add urad dal and chana dal. Sauté until they turn golden brown.
  4. Add chopped onions, curry leaves, and green chili. Sauté until the onions become translucent.
  5. Add chopped carrots and bell peppers. Cook for a few minutes until the vegetables are slightly tender.
  6. Add chopped tomatoes and cook until they become soft and mushy.
  7. Add the soaked and drained foxtail millet to the pan. Mix well with the vegetables.
  8. Add salt and water (around 2 cups) to the pan. Mix everything together.
  9. Cover the pan and let the foxtail millet cook on low heat for about 15-20 minutes until it becomes soft and fluffy, and the water is absorbed.
  10. Remove from heat and let it sit covered for a few minutes.
  11. Fluff the cooked foxtail millet upma with a fork. Garnish with chopped coriander leaves.
  12. Serve the Foxtail Millet Upma hot with a side of coconut chutney or pickle. Squeeze some lemon juice over the upma for added tanginess, if desired.
